Crispy, Crunchy Apple Sandwiches

Ingredients
1 large apple (we used Gala, but Honeycrisp or Granny Smith would also be perfect!)
Nut butter of your choice (we used peanut butter, but almond, sunflower seed or cashew butter are de-lish!)
Granola (your favorite flavor–even better if it’s homemade!)
Lemon juice (optional)

Steps
1. Core your apples and, with a sharp knife, cut your apple horizontally into ~1/2″ thick pieces.
2. Spread nut butter on one side of the apple “bread,” then sprinkle with granola. Top with another apple slice & sprinkle with a tiny bit of lemon juice to prevent browning (if you’d like).
3. Serve & enjoy!
