Who doesn’t love the salty, crispy goodness of potato chips? Most kids love this classic snack! However (and quite unfortunately!), popping open a bag of potato chips is not the healthiest choice, so nutrition-conscious parents are finding an alternative that their kids will love.

Kale is the epitome of superfood. One cup of chopped kale contains a high concentration of antioxidant vitamins A, C and (especially) K. It is packed with 9% of your daily value of calcium, 206% of vitamin A, 134% of vitamin C and 684% of vitamin K. You will also get your share of essential minerals such as copper, potassium, iron, manganese and phosphorus.

But what does that mean for your body? Kale is a front-runner in anti-cancer and eye health benefits, in helping in lowering blood cholesterol and in reducing the risk of blood disease. It is also plenty rich in antioxidants.

Ingredients

  • Kale bunch–there are plenty of types to choose from!
  • Olive oil
  • Sea salt and/or your favorite spices

Steps

  1. Preheat oven to 350 degrees and line your pan with either parchment paper of aluminum foil.
  2. Thoroughly clean the kale. Remove the bottom chunky stalks and discard. Rip the rest of the kale into bite sized pieces, keeping in mind that the leaves will shrink slightly in the oven so you don’t want to rip them too small!
  3. Rub each piece of kale in olive oil and sprinkle with salt and/or your favorite spices. Try chili powder for a real kicker of a chip or garlic salt for a pop of flavor everyone loves!
  4. Bake for 10 to 15 minutes until the edges of the chips are nice and brown. Keep an eye on your chips as they can burn easily.
  5. Storing the chips is easy. Simply pop them into a bag and store in your cupboard–right where that bag of potato chips used to be!
